Located in the rolling hills of Gavi, Cascina degli Ulivi is one of Italy’s most iconic natural wine estates, founded by Stefano Bellotti, a pioneer of biodynamic farming and uncompromising natural winemaking. His philosophy was clear: wine should be a pure expression of living soil, without manipulation.

The vineyards lie between 280 and 350 meters altitude, on soils of marl, clay, and limestone, giving the wines both structure and finesse. Farming has always been biodynamic, with deep respect for nature, biodiversity, and low yields, allowing each parcel to fully express its identity.

At Cascina degli Ulivi, making wine means accompanying a natural process rather than controlling it. The approach has always been consistent: wines are produced exclusively from their own biodynamically grown grapes, without any additives. No selected yeasts, no enzymes, and no oenological inputs are used. Each wine follows a different vinification path, carefully chosen to best interpret the character of the grapes and the vintage.

Today, the estate is carried forward by Illyria Bellotti, who continues her father’s legacy with the same sensitivity and conviction. The wines remain alive, textured, and deeply expressive — a true reflection of a philosophy where nature leads, and the winemaker simply guides.
