Nicolas Bourget, a seasoned chef turned viticulturist and oenologist, found himself entranced by the allure of Paros Island, a gem nestled in the embrace of the Aegean Sea. Together with his wife, Marie Astrid, and their children, he made the bold decision to uproot their lives in France and embark on a new adventure in this idyllic haven. With a shared passion for winemaking and a deep reverence for the land, they set out to establish their own legacy on Paros.
In the tranquil embrace of the island, they erected a small, yet meticulously crafted winery—a testament to their commitment to excellence and their unwavering dedication to their craft. Here, amidst the sun-drenched vineyards and rugged landscapes, they embarked on a journey of discovery, working tirelessly to unlock the secrets of the indigenous grape varieties that thrive in the island’s fertile soil.
With painstaking care and attention to detail, Nicolas and Marie Astrid nurtured their crawling vines, known locally as “aplotaria,” employing natural and sustainable practices every step of the way. From the vineyard to the cellar, they upheld a philosophy of minimal intervention, allowing the true essence of Paros to shine through in every bottle.
Their inaugural release saw the birth of four distinct labels, each a testament to the unique terroir of Paros, meticulously crafted to marry the rugged beauty of the landscape with the elegance of French winemaking tradition.
