VINIFICATION:

The grapes are harvested and put directly into the vats. Fermentation starts spontaneously with native yeasts in a glass fiber tank. The grapes remain in the tank for a week. After maceration, the grapes are manually pressed. The wine is not clarified or filtered, so slight sedimentation is sometimes possible. We work with gravity from the reception of the grapes to the bottling.
