VINIFICATION:

The grapes are harvested and placed into a fiberglass vat. One third of the grapes remain whole while two thirds are destemmed. During fermentation, small pump-overs are alternated with gentle tapping to keep the cap in contact with the juice. This occurs during a maceration period of 21 days (depending on the vintage). The grapes are then pressed for 6 hours using our old ratchet press. Kreo is bottled in July.
