VINIFICATION:

The dried grapes are harvested and placed in a fiberglass tank. Half of the grapes are crushed, while the other half is left whole. Depending on the year and the ripeness of the grapes, there may be slight variations. Fermentation starts spontaneously with native yeasts, followed by maceration for 7 to 14 days with minimal intervention. The grapes are then pressed for 6 hours using our old ratchet press. After a year of maturation, the Tulpa is bottled after the following year's harvest. Like all our wines, Tulpa is neither clarified nor filtered, and all movements are made by gravity.
